Happy Chai Season!


Chai season is the best season. :) Great for balancing Vata dosha; masala chai is full of warm, comforting spices; a drink perfect for those cool Autumn mornings.

  • Makes about 4 cups

  • 2 tablespoons whole cardamom

  • 2 teaspoons whole cloves

  • 2 cinnamon sticks

  • 1 whole stars of anise

  • 1/2 teaspoon whole black peppercorns

  • 1 tablespoon slice fresh ginger

  • 4 black tea bags

  • 2 cups whole milk (or non-dairy milk)

  • 2 cups water

  • 1 to 3 tablespoons maple syrup or jaggery

Gently crush whole spices first with a pestle & mortar or in a towel with a rolling pin.

Place water, and spices in a pot and bring to a boil. Reduce heat and let simmer for 15 minutes. Bring to a boil again then add the milk. Be careful to add it slowly and that it doesn't blow up. Mix thoroughly. Add black tea bags and turn off heat to let steep for 5 minutes, then strain. Add sweetener of choice and stir to dissolve.


Serve warm. Enjoy!
